Ingredients:

  • 1 lb (450g) ground beef or Italian sausage
  • 1 onion, finely chopped
  • 3 cloves garlic, minced
  • 1 bell pepper, diced
  • 1 carrot, peeled and sliced
  • 1 celery stalk, sliced
  • 1 can (14 oz) crushed tomatoes
  • 1 can (14 oz) diced tomatoes
  • 4 cups beef or vegetable broth
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • 1/2 teaspoon dried thyme
  • Salt and pepper to taste
  • 1 cup broken lasagna noodles
  • 1 cup ricotta cheese
  • 1 cup shredded mozzarella cheese
  • Fresh basil or parsley for garnish (optional)

Instructions:

  •  In a large pot or Dutch oven, brown the ground beef or Italian sausage over medium heat. Break it into smaller pieces as it cooks. Once browned, remove any excess fat.
  •  Add the chopped onion, minced garlic, diced bell pepper, sliced carrot, and sliced celery to the pot. Sauté until the vegetables are softened.
  •  Pour in the crushed tomatoes, diced tomatoes, and broth. Add oregano, basil, thyme, salt, and pepper. Stir well and bring the soup to a simmer.
  •  Add the broken lasagna noodles to the pot. Cook according to the package instructions or until the noodles are al dente.
  •  In a separate bowl, mix the ricotta cheese with a pinch of salt and pepper.
  •   Once the noodles are cooked, ladle the soup into bowls. Top each bowl with a spoonful of ricotta cheese and a sprinkle of shredded mozzarella.
  •  Optional: Broil the soup bowls in the oven for a few minutes until the cheese is melted and slightly browned.
  • Garnish with fresh basil or parsley if desired and serve hot.
