Ingredients:
- 1 lb (450g) ground beef or Italian sausage
- 1 onion, finely chopped
- 3 cloves garlic, minced
- 1 bell pepper, diced
- 1 carrot, peeled and sliced
- 1 celery stalk, sliced
- 1 can (14 oz) crushed tomatoes
- 1 can (14 oz) diced tomatoes
- 4 cups beef or vegetable broth
- 1 teaspoon dried oregano
- 1 teaspoon dried basil
- 1/2 teaspoon dried thyme
- Salt and pepper to taste
- 1 cup broken lasagna noodles
- 1 cup ricotta cheese
- 1 cup shredded mozzarella cheese
- Fresh basil or parsley for garnish (optional)
Instructions:
- In a large pot or Dutch oven, brown the ground beef or Italian sausage over medium heat. Break it into smaller pieces as it cooks. Once browned, remove any excess fat.
- Add the chopped onion, minced garlic, diced bell pepper, sliced carrot, and sliced celery to the pot. Sauté until the vegetables are softened.
- Pour in the crushed tomatoes, diced tomatoes, and broth. Add oregano, basil, thyme, salt, and pepper. Stir well and bring the soup to a simmer.
- Add the broken lasagna noodles to the pot. Cook according to the package instructions or until the noodles are al dente.
- In a separate bowl, mix the ricotta cheese with a pinch of salt and pepper.
- Once the noodles are cooked, ladle the soup into bowls. Top each bowl with a spoonful of ricotta cheese and a sprinkle of shredded mozzarella.
- Optional: Broil the soup bowls in the oven for a few minutes until the cheese is melted and slightly browned.
- Garnish with fresh basil or parsley if desired and serve hot.
