Here's a simple and delicious Instant Pot baked beans recipe for you:

Ingredients:

  • 2 cups dried navy beans, soaked overnight
  • 1 onion, finely chopped
  • 1/2 cup molasses
  • 1/3 cup brown sugar
  • 1/4 cup ketchup
  • 2 tablespoons Dijon mustard
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon garlic powder
  • 4 cups water
  • 4 slices bacon, cooked and crumbled (optional)

Instructions:

1. Soak the Beans:
  • Use cold water to rinse the dried navy beans.
  • Put the beans in a large bowl and cover them with enough water 2 to 3 inches above beans label.
  • Allow them to soak overnight. Drain and rinse the soaked beans before using.

2. Prepare the Instant Pot:
  • Place the soaked and rinsed beans into the Instant Pot.
3. Add Ingredients:
  • Add the finely chopped onion, molasses, brown sugar, ketchup, Dijon mustard, salt, black pepper, and garlic powder to the Instant Pot with the beans.
4. Add Water:
  • Pour in 4 cups of water over the ingredients. Make sure the beans are submerged in water.
5. Mix Well:
  • Stir the ingredients thoroughly, making sure the beans are well-coated with the sauce.
6. Pressure Cooking:
  • Put the Instant Pot lid and set the vent to the sealing position.
  • Cook on high pressure for 45 minutes.
7. Natural Release:
  • Give the Instant Pot 15 minutes to release the pressure on its own.
  • After 15 minutes, carefully switch the vent to the venting position to release any remaining pressure.
8. Check and Adjust:
  • Open the Instant Pot and check the consistency of the beans. If the sauce is too thin, you can use the sauté function to simmer and thicken it.
9. Optional: Add Bacon:
  • If desired, stir in the crumbled bacon for an extra layer of flavor.
10.Serve:
  • Spoon the baked beans into a serving dish and serve hot as a delightful side dish.

Feel free to experiment with the recipe by adding your favorite herbs or spices to enhance the flavor according to your preferences. Enjoy your homemade Instant Pot baked beans!
