  • 4 thick-cut pork chops
  • Salt and black pepper, to taste
  • 1 tablespoon olive oil
  • Salt and black pepper, to taste
  • 1 tablespoon olive oil

For the stuffing:

  • 1 cup diced apples (such as Granny Smith)
  • 1/2 cup dried cranberries
  • 1/2 cup chopped onions
  • 1/4 cup chopped celery
  • 2 cloves garlic, minced
  • 1/2 teaspoon dried thyme
  • 1/2 teaspoon dried sage
  • Salt and black pepper, to taste

For the glaze:

  • 1/4 cup apple cider
  • 2 tablespoons maple syrup
  • 1 tablespoon Dijon mustard

  1. Preheat your oven to 375°F (190°C).
  2. In a skillet, heat olive oil over medium heat. Add onions, celery, and garlic. Cook until softened.
  3. Add diced apples, dried cranberries, thyme, sage, salt, and pepper to the skillet. Cook for an additional 3-5 minutes until the apples are slightly softened. Remove from heat and let it cool.
  4. With a sharp knife, create a pocket in each pork chop by cutting horizontally into the thickest part of the chop. Be careful not to cut all the way through.
  5. Season the pork chops with salt and pepper, both inside and outside.
  6. Stuff each pork chop with the apple-cranberry mixture.
  7. In the same skillet or a new one, sear the stuffed pork chops over medium-high heat until browned on both sides. This will take about 2-3 minutes per side.
  8. Transfer the pork chops to a baking dish.
  9. In a small bowl, whisk together the apple cider, maple syrup, and Dijon mustard to create the glaze.
  10. Brush the glaze over the stuffed pork chops.
  11. Bake in the preheated oven for about 25-30 minutes or until the internal temperature of the pork reaches 145°F (63°C).
  12. Allow the pork chops to rest for a few minutes before serving.

Serve the Apple-Cranberry Stuffed Pork Chops with your favorite side dishes, such as roasted vegetables, mashed potatoes, or a green salad. Enjoy your delicious and flavorful meal!
