Ingredients:

For the fish:

  • 4 white fish fillets, such as pollock, haddock, or cod
  • 1 cup all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 cup cold sparkling water or beer
  • Oil for frying (vegetable oil or canola oil will be good choice)

For the chips (fries):

  • 4 large potatoes, peeled and cut into thick strips
  • Oil for frying
  • Salt to taste

Instructions:

Prepare the Chips (Fries):

To get rid of extra starch, rinse the potato strips in cold water. After that, use paper towels to dry them.
Heat oil in a deep fryer or a large pot to about 325-350°F (165-175°C).
Fry the potato strips in batches for about 4-5 minutes until they're lightly golden and cooked through but not browned. Remove and drain on paper towels. While you're preparing the fish, let them cool.

Prepare the Fish:

Pat the fish fillets dry with paper towels to remove excess moisture.

Mix the flour, baking powder and salt in a bowl. Gradually whisk in the sparkling water or beer until the batter is smooth.

Heat oil in a deep frying pan or skillet to around 350-375°F (175-190°C).

Frying:

Dip each fish fillet in the batter, letting the excess drip off.

Once the oil is hot, carefully drop the coated fillets in. Fry for about 4-5 minutes on each side until they turn golden brown and the fish is cooked through.

Once cooked, remove the fish from the oil and place them on a plate lined with paper towels to absorb excess oil.
