Ingredients:

For the crust:
  • 1 1/4 cups all-purpose flour
  • 1/2 teaspoon salt
  • 1/2 cup unsalted butter, cold and cut into small pieces
  • 2-4 tablespoons ice water
For the filling:
  • 1 cup granulated sugar
  • 1 cup corn syrup (light or dark, according to preference)
  • 3 large eggs
  • 1 teaspoon vanilla extract
  • 2 tablespoons unsalted butter, melted
  • 1 1/2 cups pecan halves

Instructions for making an Authentic Pecan Pie:

Step 1: Prepare the Crust
  • In a large bowl, mix 1 1/4 cups of all-purpose flour with 1/2 teaspoon of salt.
  • Add 1/2 cup of cold, unsalted butter cut into small pieces.
  • Use a pastry cutter or fork to cut the butter into the flour mixture until it resembles coarse crumbs.
  • Gradually add 2-4 tablespoons of ice water, one tablespoon at a time, mixing until the dough comes together.
  • Form the dough into a disk, wrap it in plastic wrap, and refrigerate it for at least 30 minutes.

Step 2: Roll Out the Dough
  • Preheat your oven to 350°F (175°C).
  • On a floured surface, roll out the chilled dough into a 12-inch circle.
Step 3: Prepare the Pie Dish
  • Carefully transfer the rolled-out dough to a 9-inch pie dish.
  • Trim any excess dough from the edges and crimp the edges as desired.
  • Place the pie crust in the refrigerator while you prepare the filling.

Step 4: Make the Filling
  • In a medium bowl, whisk together 1 cup of granulated sugar, 1 cup of corn syrup (light or dark, according to preference), 3 large eggs, 1 teaspoon of vanilla extract, and 2 tablespoons of melted unsalted butter until well combined.

Step 5: Assemble the Pie
  • Arrange 1 1/2 cups of pecan halves evenly over the bottom of the chilled pie crust.
  • Pour the prepared filling mixture over the pecans, ensuring they are evenly coated.

Step 6: Bake the Pie
  • Place the assembled pie on a baking sheet to catch any spills.
  • Bake in the preheated oven for 50-60 minutes, or until the filling is set and the crust is golden brown.
  • If the edges of the crust begin to brown too quickly, cover them with aluminum foil halfway through baking.

Step 7: Cool and Serve
  • Once baked, remove the pie from the oven and let it cool completely on a wire rack.
  • Once cooled, slice the pecan pie and serve.
  • Optionally, serve slices with whipped cream or vanilla ice cream.

Enjoy your homemade, authentic pecan pie!
